Hello, I am Madhura and welcome to MadhurasRecipe Marathi Let’s see how to make ice cream today. We are making ice creams of 4 flavours today. That too quickly, eggless and without ice cream machine!! To begin with let’s make base for ice cream. Take 1 kg heavy whipping cream. I am using store bought whipping cream. 1 kg whipping cream almost measures 4 cups. Let’s whip this. To begin with beat on medium speed until you get soft peak. I have shown you the recipe of whipped cream. You can follow that recipe too. If you have watched, it is the same process. We have blended on medium speed for about 2 minutes. Let’s beat on high speed now. After beating on high speed for about 4 minutes, it has begun to get soft peak. We need 4-5 minutes more. We have to blend or whip this until it gets stiff peak. I have whipped this cream for about 5-6 minutes. It has got nice stiff peak. The bowl that I was using, it could not hold all the cream. So I changed the bowl. Add 2 continers of 400 ml each sweetened consdensed milk. Keep this in freeze for atleast 1 day before adding this. So that it becomes nice and thick and our mixture doesn’t become runny. If you add condensed milk that is at room temperature, then this mixture will be runny. I have added 2 containers of sweetened condensed milk in this whipped cream. Let’s blend again. Condensed milk should be blended well in this cream. This is looking yummy. Ice cream base is already now. This is testing yummy as it is. We will make ice creams of different flavours from this base. To begin with, being summer, mango flavour!! Take about 1 cup ice cream base into a bowl. Being mango ice cream add 1/2 cup mango pulp for 1 cup ice cream base. To make pulp, take alphanso mango, peel it, take out it’s pulp and blend it in mixer. Like we make ambyacha ras. I haven’t added any additional sugar or milk while making pulp. So this pulp is nice and thick. Add pulp and mix well. I have mixed this really good after adding mango pulp. Take this out into a container. Wow.. This is yummy… Colour of mango is looking nice in this mango ice cream. Close the lid and set this in deep freezer over night. Mango flavour is ready. Now next my most favourite flavour, that is gulkand ice cream. I just love gulkand ice cream. Take 1 cup ice cream base into a bowl. If you have ready base then you can make ice cream of any flavour and as you want. Add 1/4 cup store bought rose syrup. This gives nice taste of gulkand or rose flavor and awesome colour. Mix well. Wow.. After adding rose syrup, you can see, it has got awesome colour. Rose syrup gives nice flavour to ice cream too. Add 1/4 cup gulkand. This is store bought gulkand. Add gulkand. Do not mix gulkand much. We will just fold it so that it will be evenly spread into ice cream. Or mixed well. It won’t set on one side only. Separate gulkand before adding. Mix well. Take this out into a plastic container. Close the lid and keep in deep freeze to set over night. Let’s make vanilla flavour ice cream. Take 1 1/2 cup base into a bowl. Add 1/2 tsp vanilla extract and mix well. Isn’t this simple!! After mixing well, take out into a plastic container. Close the lid and keep in deep freeze to set over night. I have lots of ice cream base left. You must be thinking what is to be done with this? We have made ice creams of 3 flavours till now. We will make lot of choco chips from this base. My daugher and niece love choco chips ice cream. Heat up 1/2 cup milk. When milk is a little hot add cocoa powder. Milk is a little hot. It has begun to boil. Add 1/2 cup unsweetened coco powder. We are making chocolate syrup for making chocolate ice cream. Add 2 tsp coffee powder.Coffee powder enhances ice cream flavour. Mix well. Boil this really good to make thick syrup. Chocolate aroma is so good. There should be no lumps of cocoa powder. It has begun to boil. Add 1/4 cup sugar and mix well. Syrup has become creamy and thick. It has got nice consistency. Turn off the gas. Cool down the syrup completely. Chocolate syrup has cooled down completely. See the consistency. It is creamy and smooth. Add syrup into ice cream base. Coffee gives nice flavour. Mix well again. I have mixed chocolate syrup in ice cream base really good. Add 1/2 cup choco chips. Keep few choco chips for garnishing. Mix well. Chocolate and coffee flavour tastes too good. I have a jumbo container. Take out ice cream into it. I have taken out ice cream into a big container. Garnish with choco chips. Close the lid and keep in deep freeze to set over night. I have kept 4 ice creams to set. These are quick ice cream recipes. There are no complications. Once ice cream base is ready, you can make ice cream of any flavour. You can make pan, strawberry, chikoo, keshar pista ice cream. You can infuse any flavour you want. I have set all 4 ice creams over night. Now vanilla. Mango ice cream now.
