The espresso crema Welcome to the new De’Longhi episode. Today we’re going to look at the
features of the Autentica’s espresso. The coffee is perfectly topped by a
lovely firm emulsion, the crema, which is the essential seal that preserves the
espresso’s heat and fragrance until the very last sip. This is the crema of Slow Food’s single-origin
Huehuetenango Highland Arabica Coffee: it’s the colour of a monk’s frock,
with a glossy smooth texture. In contrast, the crema of the Arabica and Robusta blend
is firmer and more long-lasting with a dark brown colour.
